Thursdays in the Kitchen Class Recap & Recipes: Succulent Summer Fruit at the Fullerton Arboretum

Tonight saw the last class in the summer set of Thursdays in the Kitchen at Fullerton Arboretum. Chefs Jonathan Dye and Jonathan Duffy Davis instructed an excellent menu that included tropical sangria, prosciutto wrapped figs with St. Andre, stuffed pork chops, a stone fruit crostata, and more! An evening shared with close friends is hard to beat, and this week I had the opportunity to cook and dine with my close friends, the Parkers. I have worked with Jane Parker at Williams-Sonoma for years; her daughter Annie is a very good friend of mine and possesses fearless taste. Jane is an exquisite cook and hostess, and whenever she opens her house to entertain there is an absolute certainty there will be fine food, great style, and a completely relaxed evening. Tonight’s cooking class at the Fullerton Arboretum featured fun twists on classic summer time favorites. We made three kinds of salsa, a tomato, onion and pickled cucumber salad, steak with chimichurri and some amazing blueberry tequila ice cream! Making Your Own Preserved Lemons

People who like to eat and to cook are crazy about preserved lemons, but I must confess that before the “Thursdays in the Kitchen: Cooking with Lemon” class at the Fullerton Arboretum,  I had never even eaten them. With a heavy lemon crop on the branches and the need for a subject to film in my kitchen at home, I decided to make this short film. Thanks to Jonathan Dye and Alicia Hitchcock for the inspiration!
